Known Ground reconstruction
- 1whole partridge, patted dry
- 3 tbspunsalted butter, divided
- 8 ozfresh mousseron or small cremini mushrooms, cleaned
- kosher salt and black pepper, to taste
Known Ground reconstruction
Fairy-ring mushrooms are not consistently available, so cultivated mousserons or small cremini are disclosed alternatives; the mushroom-forward covered preparation is unchanged. This version has not been personally tested by Known Ground. Cook the bird and any poultry forcemeat to 165°F (74°C) in its thickest portion.
Instructions
1. Heat the oven to 350°F. Season the partridge and brown it on all sides in 2 tablespoons butter.
2. Sauté the mushrooms in the remaining butter until lightly coloured; season them.
3. Put the mushrooms in a small ovenproof casserole, set the partridge among them, and cover tightly.
4. Cook until the partridge reaches 165°F (74°C), about 20 to 25 minutes. Serve immediately in the casserole.

Method
Truss the partridge for an entrée, colour it in butter, set it in a terrine, and surround with fresh mousserons sautéed in butter. Close tightly, cook in the oven, and serve as it stands.
